A Honeywell L4006A1967 aquastat, adjustable over 100-240°F with automatic reset. Automatic reset is the distinction from the manual-reset versions in the same family: this one makes again by itself once the temperature falls back, which is what an operating control needs to do. A manual-reset unit is used where a trip must be investigated before the boiler can run again. Fitted in a well so the bulb reads water temperature directly.
