A Honeywell L4080B1212 high limit aquastat. It is the control that caps boiler water temperature, breaking the burner circuit when the water reaches the limit setting and making again once it has fallen back. It is fitted as a limit rather than an operating control, so in normal running it should never be the thing switching the boiler — if it is cycling regularly, the operating control or the system flow is the problem.
